Greek Pasta Salad Recipe

The Greek pasta salad recipe I use at my restaurant is with chulopites, a Greek pasta cut into flat, curvy pieces, though when I first tried this dish, in a small seaside taverna in Mykonos, it was made with Italian pasta tricolore.

This is a lovely summer dish!

In addition to pasta you need:

  • tomatoes cut into small cubes
  • feta cheese cut into small cubes
  • black olives
  • red onion, cut into fine slices
  • olive oil, a dash of vinegar, a pinch of dried Greek oregano
  • some fresh oregano leaves (optional)

    Boil the chulopites or the pasta according to the instructions on the packet. Mix the pasta in a heatproof dish with the tomatoes and feta cheese, sprinkle with the olive oil and put in the oven until warm and the feta cheese softens a bit. Take out and add the sliced onions, the olives, the vinegar and the oregano. Decorate with fresh oregano leaves. Can be served with bread and some tzatziki on the side.

    Another version is to add a few salted anchovies. Great when it's really hot and you sweat a lot and your body needs salt!

    This dish can also be eaten cold, but the pasta should at least have room temperature as boiled pasta straight from the fridge tastes jeurkk!!!
