Greek Potato Salad

Greek potato salad is one of the easiest meze or side dishes you can make. As long as you have some boiled potatoes, onions, lemon juice and olives in the fridge you can make this salad in a few minutes. Here we go:

Boil the potatoes, let cool and peel them. Chop in small cubes. Cut red onion or when in season, fresh spring onions, in slices. Mix. Add some salt, sprinkle with olive oil, freshly pressed lemon juice and dried oregano. Decorate with olives.

Pelagias Potato Salad

This is another version that I learned from my friend Pelagia. Very yummy!

In addition to potato and onions you also add tomatoes and feta cheese chopped in cubes. Heat the salad in the micro or oven until the feta melts slightly and serve warm.
